What Is Tempoyak ?


Tempoyak is one of the favourite foods in Central Kalimantan. It is usually  consumed by the ethnic Dayakness in Central Kalimantan. Tempoyak is made by taking the flesh of durian and mixed with salt and kept in room temperature. Don’t forget to left for fermentation process for some days maybe once week. There are so many recipes to cook Tempoyak, but I will present this recipe only. Basic Materials Tempoyak are durian, some salt, sugar and cooking oil. How to Make Tempoyak ? Firstly, we meat durian, input into the jar while season with enough salt, and then closed tightly, secondly after about One Week, open and mixed well, tempoyak ready for use. Then blended ingredients are cloves of garlic, cloves onion, large pieces of red chilli, cayenne pepper, according to your taste. The last step stir until it cooked. Tempoyak ready to serve. As a fermented food, Tempoyak making process involves a number producing microorganisme or bacteria.




Tempoyak        : A food is made by taking the flesh of durian / a unique side dish made exclusively   out of durian.
Bacteria           : Bakteri

Dayakness       : Culture, one of the tribles in Central Kalimantan.

Fermentation   : Fermentasi, peragian.

Involve            : Melibatkan, memerlukan, mengakibatkan, mengakibatkan.

Tempoyak       : A unique side dish made exclusively out of durian.
